3 Easy Plant-Based Recipes
There are few feelings in the world that top a full belly and a soft couch. A warm (sometimes crippling) meal and the comfort of your living room, is a true utopia. Pizza, cookies, and perhaps the frequently haunted late night take out spot, are usually on the docket. But, not all pleasures have to be guilty... We caught up with our friend and health and wellness coach, Melissa Hanson for a few recipe spins on some classic comfort foods.
Healthy Mex Dip
- Refried beans (1 can)
- Black beans (1 can)
- 3 Bell peppers (chopped)
- Soy chorizo (Trader Joe’s)
- Salsa
- Shredded vegan cheese of choice
Cover with foil and bake in the oven on 400° for 30 min.
Enjoy with your favorite chips! Tortilla, cassava, black bean chips, whatever you prefer. Guilt free!

“Egg” (Tofu) Scramble
- Organic sprouted tofu
- Nutritional yeast
- Garlic powder
- Tumeric
- Salt
Crumble up your sprouted tofu in a large frying pan. Pour in nutritional yeast, salt, garlic powder to taste. A pinch of turmeric just for color (makes the tofu look just like eggs).
Fry up some sausage-less sausage from Trader Joe’s for a little extra.

Avocado Toast:
- Avocado
- Your Favorite Bread
- Tomatoes
- Spices
Toast your bread to your liking with a toaster or toaster oven. Cut open the avocado. Using a fork, smash the avocado in a bowl until it's a smooth spread. Spread the avocado onto your toast. Add tomatoes and spices to taste.
You can spray the toast with avocado oil and sprinkle some sea salt before adding the avocado for extra deliciousness.
